橙皮巧克力

分量:20~30块橙皮巧克力

橙子3个
细砂糖300克
盐1克
70%可可脂黑巧克力豆250克
橙子擦盐洗净,将果肉剔下留皮1 2,切成0.5厘米宽的橙子皮3 4。
将橙皮放入盛有清水的锅内,倒入细砂糖5,大火煮开,搅拌至细砂糖溶化。
转中火熬煮至糖水快干时,转小火煮至糖水完全收干,橙皮表面包裹一层糖霜6。
将橙皮取出,放入烤箱中下层100℃烤40~60分钟7,取出,自然晾凉8。
黑巧克力豆隔水熔化9,将每块橙皮的一半裹上黑巧克力液10,放在烘焙纸上等巧克力自然凝固11。
Tips
橙子外皮一般会包裹一层食蜡用于保存,清洗时最好用温水,加些醋浸泡后,再用粗盐摩擦清洗。
秋冬可以改用柚子皮,别有一番滋味。
